My family normally makes this for Christmas pudding and for New Year's Eve. Its a super simple recipe requiring only 5 ingredients.

Ingredients
1 large butternut squash or equivalent amount pumpkin
250g butter, cut in half
1 pack filo pastry
1 1/2 mug brown sugar
1 tsp cinnamon
Method
Peel and grate the butternut squash. Add to a large pot with half the butter and cook until soft and reduced in size. If the mix starts looking dry before its cooked through, add a splash of water. Once the butternut squash has become soft add the sugar and cook for about 5 minutes until most of the liquid has evaporated. Add the cinnamon and cook for a few more minutes. Turn off the heat.

Melt the rest of the butter in a small pan. Get a large chopping board and a pastry brush ready. Butter a baking tray and leave aside to hold the pie. Remove the filo pastry from its packaging and open on the side next to the chopping board. Grab one pastry sheet and place it flat on the board. Brush this with the melted butter. Layer a second sheet on top of the buttered one. Spoon 2 to 3 tablespoons of the butternut mix onto the the top sheet, spreading it out flat. Roll the sheets together into one long tube, with the butternut squash in the middle. Place this along one side of the baking tray. Do the same with the rest of the pastry sheets, buttering one then placing another on top with the butternut squash rolled in the middle. Place each one in the baking tray, aiming to create a spiral. Brush any left over butter on top of the completed spiral before baking at 200 degrees C for 40 to 45 minutes until golden and crispy.
