I brought a giant beef tongue from a local butchers to experiment with, as my other half had only had it once before in a sandwich. It was a lot of meat so I decided on making two different recipes with it. This is the first one I made using only half of the ingredients listed here. I will be using the rest of the slices later to cook in a tomato sauce.
This amount is enough for 6 portions.

Ingredients
1kg beef tongue
1 onion, roughly chopped
1 rib celery
1 bay leaf
5-6 whole black peppercorns
Salt, to taste
Ground black pepper, to taste
1/2 cup flour
2 egg yolks
3 tbsp milk
1/2 cup oil, for frying
Method
Boil the tongue in water with the celery, peppercorns, onion, bay leaf and a little salt until tender. This took me about 2 hours.

Once cooked and cool enough to touch , take out of the broth and peel the skin. Cut into thin slices. Season the slices with salt and pepper.

Place the flour on a shallow plate.
Place the egg yolks in a bowl and mix with the milk.
Dip each slice of tongue in the flour first, then the egg mixture then back into the flour. Fry each slice in the hot oil until golden and crispy on all sides.

Serve with a slice of lemon and with a side of chips or potato mash.
Suggestions
I had some of the fried tongue left over for the next day, so I used some of the slices with pot noodles and extra hot sauce. It was so good!!!!
Use the slices in sandwiches if you have any left over.
