Another easy scone recipe with Orkney cheddar. I used a combination of cheddar, Highland Park flavour smoked cheddar and Cannonball cheese. If you are in the UK Jollys of Orkney (https://www.jollysoforkney.co.uk/) delivers Orkney cheeses, including the ones I used. They are an excellent company, always prompt delivery with high quality cheeses and fish. If you can't get hold of Orkney cheese, try another type of cheddar instead. Ingredients:
350 g self rising flour
350 g beremeal flour
2 tsp baking powder
1 tsp salt
1 tsp mustard powder
3 tbsp vegetable oil
300 ml milk
2 eggs, beaten
225 g Orkney Cheddar, Grated
Method:
Sift the dry ingredients together and make a well in the centre. Add the eggs, milk, oil and cheese. Mix into a soft dough. Don't over mix it.
Spread some flour on your work surface and tip the dough on it. Sprinkle the dough with some more flour and flatten it with your hands to 2.5 cm. Cut out your scones using a cutter or a glass. You should get about 12- 14 scones.

Place each scone on an oiled baking tray, top with a little more flour and grated cheese and cook at 200 degrees C for 20- 25 minutes until golden with the cheese melted.
