I have been experimenting with the beremeal flour I brought back from Orkney and came up with this recipe for pancakes. Its not too dissimilar to my normal recipe substituting some of the plain flour with beremeal.
Ingredients
1 cup beremeal flour
1/2 cut plain flour
1/2 tsp baking soda
1 tsp vanilla essence
2 eggs
2 1/2 cups milk
Method
Place all the ingredients in a deep bowl and whisk together, ensuring it's lumps free. It should be a quite runny mix.

Heat a little oil in a frying pan over medium heat and pour 1 ladle of the mixture at a time, ensuring it covers the bottom of the pan evenly. Flip the pancake when the edges start turning brown and curling away from the pan. The top side should be fairly firm too.

Cook on the other side for about 1 minute or so.
Slice on a plate and cook the rest of the mix in the same way.

Serve with jam, honey, maple syrup, chocolate spread and anything else you prefer.
Tip: Don't add the vanilla for a savoury version served with your preferred fillings.
