Beremeal Sourdough Flat Breads

Ingredients:

175 g beremeal

175 g wholemeal bread flour

1/2 tsp salt

130 ml yogurt

120 ml milk

100 ml sourdough starter


2 tbsp olive oil

Onion seeds, to taste (optional)


Method:

Mix the two flours together with the salt. Add the yogurt, milk and sourdough starter and bring together into a dough. You may need to use a little more water or milk to ensure all the flour is incorporated, as different batches of flour absorb liquid differently. Ensure you use a little bit at a time as you don't want too soft and sticky a dough. Turn out onto a floured surface and knead briefly to make a smooth dough. Please back in a bowl, cover and leave to rest somewhere warm until you are ready to make it.



Get a shallow baking tray ready and lined with parchment paper. Place the dough in the middle of the tray and use your hands to spread it out to cover as much space us possible. Drizzle with the olive oil, spread it out and sprinkle some onion seeds on top. Place in a pre heated oven at 200 degrees and bake for 25 minutes until cooked through and crispy. Serve with soup or anything saucy.
