Buhti (бухти)

This is a recipe for a traditional Bulgarian breakfast loved by much loved kids. Most people I know, myself included love these bite sized pastries, especially when made by your grandmother. Grandmothers in Bulgaria always seem to be good at cooking and love to indulge their grandchildren with yummy food. There is a saying in Bulgarian that by the time you become a grandparent, your children are like overboiled Rakia (strong brandy usually made out of plums or grapes). Meaning that you love your grandchildren more and are willing to spoil them a lot more than you every did your own children. When I talk about tea mug in the ingredients, I mean a mug you would normally use to make your tea in. Its a common way to measure ingredients and its how I learned to cook from my mother too. Its an easy way to cook as it doesn't require a ton of specialist (expensive) equipment that takes up space in the kitchen. Its home style cooking that's flexible and open to interpretation.



Ingredients


3 eggs

300g thick yogurt

2 tea mugs of flour

1 tsp bicarbonate of soda

1 tsp vanilla essence

1 tbsp sugar

1/2 tea mug oil


Method


Place the eggs in a large bowl and beat them together. Add the yogurt, flour soda and vanilla to the eggs. Mix everything together until you form a smooth mixture.


Heat the oil in a deep pot. Use a wet tablespoon to take some of the dough mixture and drop it in the hot oil. Fry on all sides until golden and crispy and all the mixture is used up.


To serve the buhti, sprinkle with powdered sugar or with jam or honey.
