I love making the following recipe for brunch. Its very filling so should see you through most of the day.

Ingredients
1 pack of filo pastry (this usually comes in 500g packs)
700g feta cheese
3 tbsp thick yogurt
1/2 tsp bicarbonate of soda
50 g butter, melted
Method
Pre heat the oven to 200 degrees C. Get a baking tray ready. I like using a round one but any shape will do.
Crumble the feta in a large enough bowl. Add the yogurt and soda to the feta and mix well together. the mix should be fairly thick.

Take the filo pastry out of the covering and roll flat out on the side. Spoon some of the feta mixture along the short side of the top filo sheet. Grab 3 filo sheets and roll these into one long sausage. Place in the baking tray. If its a around one, start on the outside and keep it next to the side. You are aiming to make the whole thing into a circle. Keep placing some of the mixture onto a filo sheet and roll 3 together into a sausage before placing into the baking tray, until you have used up all the feta mixture.

Brush the melted butter on top of the pastry once everything is in the tray. Bake for approximately 50 minutes until golden brown and crispy. Cut into slices. This should serve between 4 and 6 depending on how hungry you are.
