I was wondering wether you can add custard powder to cake and what would happen if you did. Turns out you can and it makes a very moist cake. The batter can be left as plain vanilla, have chocolate powder added to it, as I have done here for a marbled effects, or play around with it. Why not try adding lemon rind and juice or almonds/ almond essence for a different flavour instead of the vanilla?

Ingredients:
2 1/2 cups self rising flour
2 tbsp custard powder
2/3 cup brown sugar
150g butter
1 egg
1 tsp vanilla essence
2 tbsp yogurt
1 2/3 cups milk
3 tbsp instant hot chocolate powder or cocoa powder
Method:
In a large bowl, add the flour and custard powder and set aside.
In a separate bowl, cream the butter and sugar together. Add the egg and cream together.
Add the vanilla and yogurt. Blend together again. Add 1 cup of the milk and blend together. Don't worry about any lumps at this point.
Add the wet mixture to the flour and custard with the last 2/3 cup of milk. Blend until the batter is smooth and lump free. Set aside while you get a cake tin ready.
Pre heat the oven at 200 degrees C. Oil and line a cake tin with parchment.
Pour half the batter into the tin. Add the chocolate powder to the rest of the batter and mix to incorporate. Pour into the cake tin and swirl in gently.
Put into the oven to bake for 35-45 mins or until a skewer comes out clean. Wait to cool before cutting to eat.
