Easy Vegan Pizza

This recipe is ideal for to go lunches, to take on picnics or for a light dinner with a side salad. It's also cheap, using easy to get store cupboard ingredients.



Ingredients:

1 pack puff pastry

1 can chopped tomatoes

1/2 tsp paprika

1/2 tsp mixed herbs

Salt and pepper, to taste

A couple of handfuls frozen spinach

1/4 courgette, finely cut into ribbons

Pine nuts


Method:

Tip the tomatoes into a hot pan and add the spinach along with the herbs, salt and pepper. Cook on medium heat until the spinach has thawed through and the tomatoes have thickened. Turn off the heat.



Spread the pastry on a baking tray and fold the edges over to form a raised edge all around. Spoon the tomato and spinach mix in the middle cavity. Top with the courgette ribbons and a sprinkle of pine nuts. Bake until the pastry is golden, crispy and cooked though. Cut into squares and serve.





Feel free to change up the ingredients depending on what you have in your fridge and freezer, or add cheese.
