Jazzy Nachos

I made this for dinner the day after making the pork chop sandwiches as I had refried beans and roasted sweet potatoes left over and wanted to use them up.


Ingredients


250g mince, beef or pork

1 packet taco seasoning

1 onion, finely diced

2 large garlic cloves, crushed

1 tbsp tomato puree

1/2 cup Water

Left over roasted sweet potatoes, chopped

Pinch of sugar

1/2 packet nachos

Grated cheese


To serve


Leftover refried black beans

Guacamole or sliced avocado

Tomato salsa


Heat some oil in a pan. Add the onions and cook until starting to turn soft. Add the garlic and cook for a further minute.


Add the mince and fry until brown and cooked through. Add the leftover sweet potatoes and warm trough.




Sprinkle the taco seasoning on top and stir through. Add the tomato puree and enough water to bind everything together about 1/2 cup or a little more if needed. This should be fairly dry when the water has cooked away or it will make the nachos soggy.




Add the sugar and stir through. This counteracts the acidity from the tomato puree. Turn off the heat.


Put half a packet of nachos on a plate. Top with the mince meat mixture. Put the grated cheese on top of that and melt in the microwave or oven.


Top with the refried beans, guacamole and salsa to serve.




 

Suggestion


If you are vegan, feel free to substitute the mince with a vegan version, cooked lentils or mushrooms. Also use your favourite vegan cheese on top.


If you have leftover chilli con carne/ chilli sin carne, feel free to use this instead of the mince mixture.
