I have been watching a lot of YouTube videos by various vloggers that review Mexican street food. I have seen a sandwich similar to this one appears a few times and, as they don't give away the recipe, I made up my own version of it.
Ingredients:
Cumin
Oregano
Salt
Black pepper
Hot paprika
Onion powder
Garlic powder
2 pork chops with skin on and bone in
4 tbsp flour, for the batter
oil
To serve
2 brioche buns
Refried black beans
Chipotle mayo, or two tbsp mayo mixed with 1tsp chipotle paste
Cheddar cheese
Avocado, sliced
Sprinkle the chops on both sides with all of the herbs and spices. Use as much or as little of each herb as you like. I like mine on the spicy side, so I would go a little heavier on the hot paprika. Alternatively, use a sachet of taco mix. Leave to marine as long as possible, ideally overnight.
Take the meat out of the fridge an hour before cooking and bring to room temperature.
Put the flour on a shallow plate. Season it with all the spices used on the meat and mix together. Again, use as much or as little as you like here.

Put about an inch of oil in a pot and heat.
Take each of the chops, and dredge in the seasoned flour, covering both sides well.

Drop the chops into the hot oil and fry for about 3 mins on each side until they turn golden brown. Drain on a piece of kitchen paper while preparing your buns. Feel free to cut into the chops to check if they are cooked through.

Spread a layer of chipotle mayo at the bottom of one half of the bun. Layer with the cheese. Place the pork chop on top. Spread the refried beans on the other half of the bun, placing this on top of the meat.

Serve with roasted sweet potato wedges. For two people, I chopped up two sweet potatoes, placed them in a roasting pan, drizzling with oil and seasoning with salt and pepper. Roast for 30-40 mins until crispy and cooked through.
