It being the weekend, it only means one thing in the Drezgacheva household- pancakes!!! I didn't have any eggs at all and I was too lazy to go to the shops just for the one item so I came up with these egg free pancakes. These use things you'd probably already have in the cupboard and fridge, making them super easy to whip up. And the best bit? You can easy use a plant based yogurt of your choice.
1 cup plain flour 1/2 cup yogurt, plant based or a dairy variety 1tsp vanilla essence http://wix.to/fMA_DDA 1tsp soda Approx. 1 1/2 cup water, enough to make a runny batter
Oil, to cook the pancakes in
Place everything together in a bowl and whisk together. The batter should be smooth and fairly runny.
Heat a pan on medium to high heat with a bit of oil.
Add one laddle of batter to the hot pan. Swill the batter around so it covers the bottom of the pan.
Watch it like a hawk until the edges start turning golden brown and curling up. This is the time to use a spatula to flip the pancake and cook it on the other side.
Fry for another minute or so before sliding on a plate.
Repeat with the rest of the batter. This amount makes about 5-6 pancakes.
Serve with jam, honey, fruit or any savoury toppings you like.
