I came up with this recipe after having lots of pea hummus left over from a family BBQ and wanting to do something different with it instead of wasting it. The chimichuri might seem a little bid odd, but it works very well with the peas, bringing freshness to the ingredients. The Pea hummus itself is fat free, so if you are watching your weight, use it as is with a selection of crudites. The chimichuri is made with olive oil, which is full of good fats. You also don't need to put a lot on the soup.
Pea Hummus Soup Ingredients
300g peas, thawed if frozen
3 tbsp tahini
Lemon juice, to taste
Salt and pepper, to taste
Vegetable stock, enough to bring the dry ingredients to the desired consistency.
Method
Add the peas, tahini, lemon juice, and salt and pepper to a blender and blitz until creamy. Add a little water or stock if make the blades run smoother if needed.
Place the mixture in a pot with the stock and bring to a gentle boil until warmed through.
Chimichuri Ingredients
1 bunch of parsley
1 bunch of coriander
3 garlic cloves, diced
1- 2 chillies, depending to taste, diced
Salt and pepper to taste
Olive oil
Balsamic vinegar
Method
Add all the ingredients, apart from the olive oil and vinegar, to a blender, and blitz until the mix gets to the consistency you like best. Put everything in a bowl.
Pour enough olive oil over the herbs until just covered. Add enough vinegar to taste. Keep trying until you are satisfied, about 2 to 3 tablespoons.
When the soup is ready, serve in bowls and drizzle some of the chimichuri on top.

As it is, this recipe is entirely vegan and can easily be served cold on a hot summer's day. If you feel like you want to make it more substantial, you can add some grilled chicken, steak or mushrooms.
Store any left overs in the fridge, remembering to bring the chimichuri to room temperature before using. If you fancied a change, feel free to drizzle the chimichuri to grilled beef steak and chips.
Free free to use up any other chickpea based hummus you have left over in the fridge. Shop brought would do just fine.
