The inspiration for these came from a recipe I found online of 3 ingredient peanut butter cookies, but I didn't have enough peanut butter and sugar for the full batch. I decided to bulk the mix out a bit with quick cook porridge oats. These are very filling so you don't need much and make a good snack for on the go or in a lunch box.
Ingredients
1/2 cup peanut butter
1/2 sugar
1/2 cup quick cook porridge oats
1 egg
1 tsp vanilla essence, shop brought or home made
Method
Heat the oven to 200 degrees C.
Add all the ingredients to a bowl and mix well together.
Take a tablespoon at a time and make into a ball. Place on a parchment lined baking tray.
Place them in the oven and bake them for 10- 14 minutes, depending on how chewy you want them. I baked my batch for 14 minutes for crispy edges and a slightly chewy middle.
Suggestions
You can easily mix up the basic recipe. Try adding almonds or walnuts to the mix. Or even some almond essence instead of the vanilla?
Try experimenting with different nut butters too.
Dried fruit like raisins would also work really well.
