This is a rather unusual tasting salad I created when I was bored, had a couple of carrots that needed using up and we were going to my parents house for dinner. My parents are often my guinea pigs when it comes to new recipes and the consensus for this one was that its a bit weird. Let me know what you guys think.

Ingredients
2 Carrots, sliced into thin ribbons
1/4 tsp liquid smoke
4tbsp olive oil
1tbsp rice vinegar
2tbsp cider vinegar
2tbsp maple syrup
Chilli powder, to taste
3 large pinches of paprika, or to taste
Salt
Half a bunch of Dill, chopped small
Sesame oil
Half a lemon, juiced
Put a pot of salted water to boil on high heat. Once it is boiling, add the ribbons of carrot and cook, on high heat, until soft. Stick a knife or fork to check if they are done. This should take around 8 minutes.

While the carrots are cooking make the marinade. Mix the olive oil, liquid smoke, the two types of vinegar, chilli powder, paprika and maple syrup together. Set aside.

Once the carrots are cooked, drain and run under a cold tap to stop them cooking further. Tip the carrots into the marinade and mix well together. Cover and leave to marinade until just before eating. Preferably for at least an hour.
Just before eating, tip the marinade out and toss the carrots with sesame oil to taste. You don't need too much, as its quite strong tasting. Add the dill and the lemon juice. Mix together and serve.

Extra Suggestions:
The carrots can also be used as a sandwich filling alongside soft cheese or hummus.
For an extra quick salad, try using caned carrots.

The carrot salad also works very well in a sandwich for lunch. All you need is:
1 portion carrot salad
Buns, split in half, or sliced bread
Soft cheese, dairy or vegan
Spread the soft cheese on your bun halves or bread slices. Layer the carrot slices on one side. Place the second bun, bread slice on top and wrap up to take for lunch with you. This should be enough for 3-4 sandwiches depending on how greedy you are.
